Makhana Basundi is a rich, creamy, and completely satvik dessert that gives a healthy twist to traditional Indian sweets. Made by slow-cooking makhana (fox nuts) in milk, this dish develops a thick, rabdi-like texture with a naturally delicious and indulgent taste.
It’s perfect for fasting (vrat), festive occasions, or as a wholesome dessert. You can also prepare it using jaggery instead of refined sugar for a healthier alternative.
🥣 Ingredients:
- 1 cup makhana (fox nuts)
- 1 litre full cream milk
- 3–4 tbsp sugar or jaggery (as per taste)
- ½ tsp cardamom powder
- Chopped almonds & pistachios (for garnish)
- A few strands of saffron (optional)
👨🍳 Instructions:
- Lightly roast the makhana in a little ghee for 3–4 minutes, then crush them slightly.
- Boil the milk in a heavy pan and let it simmer on low heat.
- Add the makhana and cook for 10–15 minutes.
- Add sugar/jaggery, cardamom powder, and saffron. Mix well.
- Cook until the mixture becomes thick and creamy.
- Garnish with nuts and serve warm or chilled.
